hi dianarani,
i also using dovecot, since you're new to linux i suggest you grab the spare machine for your testing purpose before you really touch the production machine.

because i belive the machine you have now is production machine so just install that RHEL or CentOS ( prefered version 5 ) to the new machine, install base linux system only without gnome or kde

1) install software: get from repository

clamd amavisd-new squirrelmail.noarch httpd php php-mbstring php-mysql php-gd.i386 php-imap mysql-server mod_ssl openssl postfix dovecot vsftpd spamassassin bind bind-chroot perl-DBI

2) install control panel: get it from ravencore.com ( free )

rpm -ivh ravencore-0.3.2-1.noarch.rpm

one more thing do you have understanding about DNS / MX
because this is important to make your mail server working properly

anything in doubt please ask, people will help you all the way but
common sense there are no spoon feed because you have to learn to feel the powerfull linux from your finger

ps: disadvantage for using ravencore control panel for this moment is
user unable to change thier mail password ( only admin capable to do but developer will release soon for this function

cheers
