If IEC958 is not muted, try muting it (done with the M key). It's counterintuitive and not guaranteed to work, but it might - it did for me.

If you type in console:
alsamixer

and press enter, you should see mixer adjustments, but on top left corner will be information about your sound card.

Can you tell what will be there in your case?

Make sure you are using the arrow keys to see ALL of the available controls. When I run alsamixer I only see 15 controls, however there are 29. I have to scroll to the right with the right arrow key to see all of them, including IEC958. I usually just use the volume control in the gui, which you've said you no longer can see.

You need to adjust two controls to hear sound: Master and PCM - raise them up to 90%.
For me other things doesn't affect on playback volume.

Second. What do use to check or to play sound?
What desktop do you use? KDE, Gnome, XFCE?

What I can suggest:
1. Reinstall Alsasound (all of it)
2. Use any LiveCD linux to check.
3. Type in console: gstreamer-properties (if you have it, because it is from gnome)
Choose your device and plugin and press TEST.
