If you are using sarge installer, I think it has an option for installing lvm in the first place by selecting proper installer components..
Alternative way is to boot
knoppix, set up lvm from there and
use deboostrap to get base system into it.
If you leave the root partition out of the lvm, you can quite easily make rest of the system to use lvm later. Also converting an installed system to lvm is not very hard if you have a spare hd space to use.
