Tried reading the site? They provide instructions for installing the rpms under a Debian system: and since Ubuntu is Debian based, the instructions should still work for it.

Just add the following to your sources.list then use Synaptic to install 2.0beta
deb ./

Or: # Process Writer Files and transform them to PDF without
# installing
deb ./
The second one has Ubuntu ports of OO2:
openoffice.org2 (i386)
openoffice.org2-calc (i386)
openoffice.org2-common (all)
openoffice.org2-core (i386)
openoffice.org2-debian-files 1.9.76-0ubuntu1 (all)
openoffice.org2-draw (i386)
openoffice.org2-evolution (i386)
openoffice.org2-gnome (i386)
openoffice.org2-impress (i386)
openoffice.org2-kde (i386)
openoffice.org2-l10n-en-us (all)
openoffice.org2-math (i386)
openoffice.org2-writer (i386)

Uncommenting the repositories already contained in /etc/apt/sources.list will allow you to install OpenOffice.org2 beta through Synaptic
