For some files, not a specific branch of the directory tree, you would have to apply the proper permissions to the files.
Basically, with NFS you have built one single file system and every user with the correct UID (numeric UID that is)) is able to access those files or not. Like the files were on his own computer.
So, in the same way as you would restrict file access on the local computer, you'd have to do this on remote computers.
There is no way that you can make a difference between local files and shared files, or access over NFS.
That is, using regular permissions. I am fully unfamiliar with ACL or Access Control Lists. You might want to check on that.
