usually to dual-boot you'd shrink your windows partition and then install linux on the free space... how you shrink it is up to you... some people like to use partition magic on windows... some distros (such as mandrake) come with windows partition resizers built-into the installer... either way, you'll need to configure your bootloader to let you choose between windows and linux at boot time...
if you don't care about re-installing windows then you could simply delete all the partitions and then start with a new partition setup that fits your needs... like, you could give half the disk to windows and half to linux, for example...
in that case, you could use something like "cfdisk" to do the partitioning...

remember linux will need at least two partitons: one for the system (root) and one for swap...
