dovecot and postifx make a good default combination on CentOS. Plenty of docs if you look for them - http://wiki.dovecot.org/HowTo

we need to answer *specific* questions, we can't give you step by step instructions in general. There are LOADS of guides out there that you can find on google if you look.

Ok, step-by-step:
  1. Go to http://www.google.com
  2. Type in "how to configure postfix and dovecot on centos"
  3. Press ENTER
  4. Follow any of the THOUSANDS of guides you will find.
AMAZINGLY, the VERY FIRST HIT is from the CentOS site, which you could have found with just a small amount of effort.
http://wiki.centos.org/HowTos/postfix_sasl

We will always be happy to help you with questions, but how-to guides are very easily found.
