Figured out the issue I was having with the adapter. It was a configuration problem within Wine. I did the following to fix the issue....
1. Opened a terminal and typed wine regedit
2. Went to the HKEY_LOCAL_MACHINE/HARDWARE/DEVICEMAP/SERIALCOMM folder
3. Went to edit and entered new string. Made the string COM1 with value COM1.
4. Back in terminal window... went to ~/.wine/dosdevices and did ln -s /dev/ttyUSB0 com1 (has to be lower case).
This allowed the application I'm running through Wine to recognize the USB to Serial adapter as COM1. I hope this helps anyone having the same issue!
