The CCRMA site at Stanford is also a great resource.

Install qjackctl
It's a graphical configuration tool for jack (audio server) - the package depends on jack.
I use ardour for mixing
jamin for mastering
hydrogen is a really nice drum machine/sequencer.
The ldsa plugins are pretty useable.
You can use jesussonic for effects (was originally designed for realtime processing)

I haven't used those much, but they look promising:
muse(sequencer), rosegarden(note editor, sequencer), lmms(sequencer)

I have to run all audio apps as root. Otherwize there are problems.
projects to watch:
http://ubuntustudio.com/
http://jacklab.net/

You might want to install a low-latency patched kernel if you do alot of midi. I didn't do it, and it works fine. (I don't want to experiment too much, I like stability :P)

To be honest, neither do I, but there was an article I read a while ago about Ardour, and I was pretty impressed. The review was very positive and evidently it's gotten pretty favorable reviews from its users

Jep, unfortunately it's a monster application. There is so much you can do with it compared to how many people use it. It's still missing a good documentation, howtos, tutorials and so on.

For audio recording and editing, I know Audacity is popular. Keep an eye out for Jokosher too. It's in development at the moment, but they claim it'll be useful real soon. Looks nice.
