Use Add/Remove Software from the System > Administration menu. You need openoffice.org-core and as many of the other components as you want.

yum install openoffice.org-core openoffice.org-writer openoffice.org-math openoffice.org-draw openoffice.org-calc openoffice.org-impress openoffice.org-base
The first two will give you the word processor, only add the others if you want them.
You could just install openoffice.org-writer and core will be installed as a dependency anyway.
