If all your hardware works leave it alone.
Usually people compile a new kernel for one of two reasons:
To add functionality lacking in an earlier kernel. (SATA support, for example)
Or just for fun...try something different like running a super-secure patched kernel.
With redhat, I wouldn't bother. When new kernel comes along you'll recieve notice via the red hat update agent, and it'll be taken care of for you.
