i think i would download the latest developement version of
beyond linux from scratch book
http://lfs.osuosl.org/blfs/view/svn/
it's important to use the same prefix as the gnome you have now so you overwrite the links to the libs and pkgconfig files or you might end up with a mess
blfs are still on gnome 2.6.2 but
it will give you a good idea of what to do and what the dependancies are etc.....
you will have to adjust as you go and chase down some config errors
in addition you might want to delete as much gnome configuration junk as you can before you start
/etc/gconf and the hidden stuff in your home directory
i don't know of any place to get it all as one chunk but you might find it
