how sendmail works on Linux?

Hi,

I have CentOS 5 and it automatically contains sendmail. I'd like to try the email in my home network, but I don't have a domain name. Is it possible to do that? Can I use a fake domain like www.example.com, and setup sendmail so I can send/receive emails with example.com domain? Do I need dovecot too? Can I use Postfix? It seems it's anther SMTP server, just like sendmail.

I have no experience on linux email server. Can somebody help pointing out where I shall start? Thanks.

This is a wonderful question. And I too would like to hear about the solution on how to setup an e-mail service on Linux.
