I recently moved my mailserver from one box to another.
OLD box:
RH 9 / plesk 7 / horde
NEW box:
Fedora Core 1 / cpanel / horde / squirrelmail
I have copied all the emails over via ssh from a /var/qmail folder where the e-mails are stored.
I cannot, however, find a similar storage area in my new servers configuration. Being that I've activated horde on this server as well I had hoped it would be fairly simple to 'paste' the old messages in.

The email messages should have been delivered to the Mailbox/Maildir of the recipient, unless you used the standard mbox, inwhich case new mail will reside in /var/spool/mail/<username> (or a symlink in some setups)
You IMAP server choice could also be taken into consideration.

I know the new server is not using qmail as I had to create that directory - how would I go about figuring out where this server is configured to store messages?
/var/spool/mail/username exists, but I do not see anything other than usernames there (no files).
sorry if this is noobish, that's why I posted in the 'linux noob' section ... thanks for any/all help.
Uhhh... where the messages go depends a lot on what mail server you're using and how messages are stored.
Typically new messages will live in /var/spool/mail/<username> and then could be moved via the client to a local userspace store.
If you're setiing up for just a smple POP3 server, users will download their mail to a local machine with an email client (Mozilla Mail, MSLookOut, etc.), and optionally delete it from the server.
If you're gearing up for a webmail install, then the IMAP client will grab the new mail from /var/spool/mail/<username> and then file it in the user's home directory on the server.
Your second reply seems to be correct (webmail) ... if I go to /home/username/mail/user and 'vi inbox' it seems to be some sort of flat file with all messages contained. How then would I go about adding our old messages aside from opening each individual message from the old server and pasting into this flat file on the new?
I know I must be making this way more difficult than it should be
When I open the /inbox file on the new server, it seems to contain all these messages in a flat file, leaving me stumped as to how I may add them. I may just see if I can grab these files to my local machine, combine into a text doc and send to myself.
Is this something I must install qmail to use? I cannot seem to locate a download for this script, only man pages and how-tos. I assume by my readings this script will take those files from my old server and create a 'flat' file for my new server ...
anyway, thanks for your help so far ... anything else you may have is appreciated.
