general sftp question


hello,
i'm confused by what sftp is. yes i know secure ftp but, from all the posts i've been reading is seems there is alot confusion between ssh over ftp and sftp. is it the same as running a normal ftp server, just that the log-ins and file transfers are encrypted (so a windows user can use a gui and just upload/download files)? or is it like providing shell access where you have to worry about people running/executing programs??
i read in one post where someone mentioned that one of the methods is actually not encryped at all if you view it with a packet sniffer!

From openssh.com:

The OpenSSH suite includes the ssh program which replaces rlogin and telnet, scp which replaces rcp, and sftp which replaces ftp.

apparently the daemon sshd handles all these functions... not sure if there's a way do disable any specific one though.

thanks for replying OEP,

so if i run openssh as a daemon i'm running an sftp server + more? aha ok then some of those posts make more sense now. i wouldn't want folks getting on my server then screwing around in there.

are there any other programs like this to effectively scramble the contents that are being uploaded/downloaded? or can you minimize the risk of folks mucking around on your system?
why would i want to do this? well "for the fun of learning how & why not" is what keeps me up late every night
