I have a similar setup where email to an address not relating to a mailbox I have registered sends them to an admin address. It works well and, as you mentioned, highlights spammers.
Unfortunately, the email sent from Linux Questions fails when trying to send to such an address, so I have no email updates. So, yes, it's a great solution but some sites may send email via services which won't allow sending to a "catch-all" address more than a few times.
Not sure what you’re doing, but I’m using aliases. There’s nothing the sending/delivering sees that looks different than any other “real” email address. That the mail is delivered to a different mailbox than it was addressed to is completely transparent.
Of course, one has to be able to do that. AFAIK, it’s an MTA function. At least that’s where I configure my aliases: in my MTA.

I have an admin@ email address and my provider sends anything not sent to a specific address at the domain to that address. It works really well apart from one website which, for some reason, has a mail provider which balks at this and refuses to send to my provider.
Yes, I know, that should not happen but I have seen other people type of this also and, again, the only email affected is from this particular website with others who send regular email not being affected at all.
