So just installed Gutsy server with mail svc's...how do I configure them?

So just installed Gutsy server with mail svc's...how do I configure them?
I haven't added any packages to this installation; all is from the latest CD. It's running smtp and pop3. Where do I find configuration information for each of these services, and how do I configure users?
