Sendmail is a mail transfer agent and is not really concerned about mailboxes. Backing up your mailboxes will depend on what mail delivery agent you are using and what format it is saving the mail in. Often it is sufficient to simply copy the mailstore files or directories. Setting quotas are also software dependent. Difficult to be more specific without knowing more about what you are using.
