Introduction to Linux - A Hands on Guide
This guide was created as an overview of the Linux Operating System, geared toward new users as an exploration tour and getting started guide, with exercises at the end of each chapter.
For more advanced trainees it can be a desktop reference, and a collection of the base knowledge needed to proceed with system and network administration. This book contains many real life examples derived from the author's experience as a Linux system and network administrator, trainer and consultant. They hope these examples will help you to get a better understanding of the Linux system and that you feel encouraged to try out things on your own.

I have searched for hours (forums/google/amazon) but I haven't found that many books about IPtables. Many books cover IPtables (show a few examples), but there seem to be some lack of "depth" ...
I would like to buy a book that covers almost everything about IPtables and that walk thru with me, holding my hand
If it cover other network security topics, it's a bonus ...
The only book I could find was the Linux Iptables Pocket Reference. It's just a pocket reference, and I haven't used it so I don't know how good it is, but I might buy it.
I have Linux Firewall (2nd Edition) by Robert Ziegler that goes into detail about iptables and its geared toward home/small business usage. Its an ok book, good but not great, gives detailed examples of various rules for network services. Look for a sample chapter on Amazon or the publisher's web site.
I'd recommend the Linux Firewalls book and the Red Hat Linux Firewalls book. Obviously the Red Hat book has more of a distro bias, but the parts on iptables/netfilter are applicable to most linux distros. Gives a pretty good explaination of all but the most obscure options. I'd also have to agree with 320mb that the netfilter site and the HOWTOs/tutorial links there are equally as good if not better. I don't like telling people to RTFM, but the man page for iptables is also extremely usefull and well written.
