A workstation can be anything that you want it to be. Browsing the internet
reading or writing emails
using a text editor
using a office suite
listening to music
watching a video
A server can be a webserver that hands out webpages (apache) or a name server (DNS like bind)
There are tons of apps so that you can mix them to your needs.
It can also be a combo or both.
