my sound is doing whatever it wants

i just installed ubuntu a few days ago, and everything was going just fine; warcraft, ventrilo, totem and musicplayer etc.

i've been using a usb logitech headset w/ mic and it was working just fine. today, for reasons i can't remember now.. i unplugged it. now i can't get sound back into the headset (except for desktop and window bleepbloops) and ventrilo doesn't recognize my headsets mic as existing.. it keeps trying to use the front mic built into my laptop instead, despite the fact that in sound preferences when i hit test it uses the headset mic and works fine.

i've been messing around with it for like an hour now, and i've realized i have no idea how to assign in / out sounds for individual programs :T

please help
