launcher icon in GNOME
I've made a few launchers that execute such things as:
xterm
xterm -T blah -e bleh
I've also given them custom icons, and placed them in the panel (taskbar). But, when I run the launcher, the new window's icon in the panel is a generic blank page. Is there any way to change this icon (or have the launcher give it a custom icon so I don't have to manually change it every time)?

The icon in the taskbar is set by the application AFAIK, it requires NETWM compliance on behalf of the toolkit used.
xterm is a raw Xlib app, and does not even have an icon. This is probably why there is no icon.
Does beg the question why you are using xterm -e whatever in the first place. There is a "run in terminal" checkbox if you want to see the output.

my launcher's are all for applications that run in a terminal, and I prefer xterm over the regular Terminal.

You can change the default terminal in "Preferred Applications", then you won't have to specify xterm explicitly and you should get icons.
