Changing ubuntu server language

Hello There,

I've setup a new VPS server in OVH, but it has been install in French.

would you know how to change it to English?
PS: I want to keep my keyboard in French.

I'm not sure what version of Ubuntu your using, but here are two useful links.

As it was a brand new install, I've just reinstall it.
