allowed data on e-mail "from" field

Often when I receive an e-mail from sender I see the name of the person along with the source e-mail address. For example:

Code:
from: John Smith <john.smith@example.com>
Is this "John Smith" inside the e-mail message source or is it later added by my e-mail client? Does the e-mail RFC allow one to specify other data besides source e-mail to "from" field?

Save the message as plain text then check the headers?
