Unfortunately the Canoscan 5000 is not supported by Linux.

The HP7600 is. You have to install the hplib package. Try to do that first using the package manager of you distro. If that fails, refer to this:

hplib usually takes care of printing
and scanning. HP is quite good at this.
If you cannot install hplip or it is not recent enough, you can download and install the proprietary HP driver and application. Although it works (quite well) it is not as nicely integrated as the hplip.
