This is a silly question, so all have a good laugh on me.
Why is the symbol for XFCE a rodent or more spefically, a Rat? If it is suppose to be a mouse, then the artists needs to see a few Mice.

Actually, I pondered about that, too, some years ago when I had xubuntu on one of my PCs. I guess it's really supposed to be a mouse - some sort of small rodent anyway, that's as far as I got, too.
Though the animal does look a bit strange, I'm not inclined to criticizing the artists, becasue hey, how would you draw a mouse if the instruction is: Make it as simple as possible? A streamlined body, pointed at the nose, fat dots as eyes, a few whiskers, four thick strokes as feet, and a long tail? Compared to that, the xfce symbol isn't that bad.
But I agree it's hard to find a specific hint on what it's really supposed to be. I didn't find any.

Isn't the primary developer(s) of Xfce French? Think of how the letter X is pronounced in French and you may have your answer. Pure conjecture on my part.
is he? I don't know, and I've never cared so far, but Olivier Fourdan sounds French, indeed.

Can't seem to follow you on that one. How is it pronounced? The same as in English: [ks] or sometimes [gz], [eks] when spelled out as a single letter. So where does that take us? Nowhere ...

The sound of the letter X as pronounced in French would be something like, eks. So think of what some, mostly women, might say when they see a mouse, e.g, "Eek! A mouse!"
