Both can be the best, its your choice in which one you think is better. Your only going to get opinions here. Both of these distro's can be excellent for server and desktop use..
So try them both out, you choose.. or choose the one your most familiar with!

Now don't you think that question is a little vague.. how is any member suppose to know if any Big Server is running Fedora unless we work at a place that runs Fedora on a "Big" server.. whatever a big server may be..
My current job, we have a mix of Redhat Enterprise machines that we need support on.. on any machines that don't need official support, we install CentOS.
But don't ask if anyone knows what runs what.. cause we simply don't know the answer.
Fedora is a bleeding edge distro designed for people who aren't worried about stability but who do want the latest programs. Fedora is not designed for production servers. Use CentOS if you don't want to pay for RHEL.

It definitely depends on who you ask. You really need to try both of them and decide for yourself. When you ask me, I'll say Debian. That's not to say Fedora is bad, though...
