Arch and Gentoo are really good ways to learn Linux, however the very best way would probably be LFS. Links to the Arch, Gentoo, and LFS documentation will be listed below.
I've had a browse over the three sites you mentioned and I think that LFS would suit me better than the others. It looks more basic and somehow more step-by-step.
