I'm trying to re-partition my 1-terabyte disk to have Linux Mint using about 600G and my LFS the last 400G. Right now its partitioned to where Mint has all the memory. How do I shrink it using cfdisk?
ps. In the LFS book it says to have a /home and /boot partition as well? Do I need these? and do I need to change the partitions for them now?

You will need to boot from a live CD or similar as you can not re-partition/re-size a disk while its mounted I would recommend partedmagick you can find it on distrowatch.org it comes with gparted which you may find easier than parted.
