Have you tried the obvious - simply reversing whatever you removed? You can get some basic KDE and GNOME stuff back by installing kdm and kdebase for KDE and gnome, gdm, and gedit for GNOME. If you use apt-get install, specifying

apt-get install kdebase kdm gdm gedit gnome might be enough to get stuff up and running for you. I've often installed Galeon in the past to get quite a bit of GNOME, Mozilla, and the libraries that go with them, but I don't know how badly you've messed up your system. If you have a GUI, use synaptic. It has the capability to fix broken links. Once you've done that, you can get back the stuff you want.

You may even consider installing or reinstalling something to help you out. If you're using a Debian system, the Mepis distribution installs initially as a Live CD, but it very easily installs to the hard drive. It will leave you with pretty recent software and an excellent starting pont, should you need to start over.
