Upgrade more packages

I've just installed debian, but more package are old, like gnome 1.3 ...

So I would like to upgrade more of them.
There's a graphic tools, or a line-command that make it?
I've an ADSL connection, so...

Even there's a good Debian-manual for newbie?
I'm not new on linux, I'm new on debian.
