Question how to hold packages from upgrade and vice versa

hi i would like to know how to hold packages from being upgraded, b/c whenever APT upgrades my kernel my module-assistant built nvidia kernel module becomes unusable. i would like to know how to do this in apt and how to "unhold" the package incase i want to upgrade the kernel and kernel module.

echo "package_name hold" | dpkg --set-selections changing the hold to install to let it upgrade again.
