I've install freeNAS which is working just fine, but now I'd like to ba able to access via Serial cable (just in case there is a network issue).

As for the moment I'm testing it but once it will be in production there will be no screen in that room and I'll need to access it quickly even if the network goes down (for any reason).

I've try to connect a serial cable from my laptop to the FreeNAS box with the following setings:
115200, 8, none, 1, none

But I don't get anything on my screen, I don't get any error message neither.

Any idea? Is there something to enable in BSD to display the screen output on the Serial console?

I don't do BSD, but I do do serial. You must make sure of a few things before this will work. First, you will need to ascertain that the cable is correctly configured. For the application to which you refer, you will probably require a null-modem cable. There are numerous 'correct' ways of configuring such a cable, but primarily it crosses over the Tx & Rx wires so that each end of the cable has a receiver connected to a sender and a sender connected to a receiver. Next, each end of the connection must use the same communications parameters. 115200 BPS is becoming somewhat common, but I would try 9600 BPS first. The bitrate could be any standard RS-232 speed, and there is no easy way of knowing what a given port will be using. Other parameters such as parity, word size, etc are easier to guess (8,N,1 is almost universal these days).
Finally, I think it likely that if you get anything from the serial port, it will be a login prompt. I don't know how BSD goes about configuring console logins on serial ports, but unless the system has been so configured, you probably won't get any response.
