I havn't been using suse for a long time, but I assume Yast looks for a script called something like "proftpd" in /etc/rc.d/init.d (or similar) when it tries to start the ftp daemon, you could check if there is such a script in /usr/local/etc/rc.d/.. and in that case, move the script to the proper directory in /etc.
Otherwise I would just recommend you to install a suse rpm build of the ftp server from your nearest suse mirror.
