I'm would like to build a machine to be a mail server. What would be the best application to use for such a task? I would be want to host mail for two or three domains and up to 50 users.

Well, there are a few different options. Most suggest qmail, which is considered the most secure, and some recommend exim which is easier to set up, but not as secure.

Try qmail. As Wolven says, it is said to be more secure than the others.

Never tried exim. Is it reliable? Does it scale well?

I don't know about scaling well. Haven't given it much thought. I'm re-doing my mail server soon, and I'll be moving to qmail to get some more experience under it. :_)

Exim works fine for most people, with out-of-the-box style functionality. Provides a short question and answer session to get itself configured and going, and builds its config file based on that. Well documented, too, but a bit weird if you try to do anything top out of the ordinary with it.
