yes, if you want to find a specific package, use grep instead of less. dpkg-query -l | grep gnome will show you all installesd packages with 'gnome' in their name.
You can of course just use aptitude, like I do
Just type 'aptitude'. with <shift>+7 you can search for packages.
There are also graphical tools for that (synaptics for gnome and adept for kde) but I like aptitude better. I only use the adept-notifier to inform me about available updates and then install with aptitude.
