default is intended to work an a happy average... there are extra features within the lavc codec for different motion filters, deblocking / interlacing etc... but basically it works well enough in my opinion (i use the defaults after all) and any extra ones will directly affect the processing speed. basically there are few additional options as it's only worth having the ability to use these advanced features if you know you want them in the first place, not just think it might help, so tick every box. see the mencoder manpage for more lavc options.
also note that different filters actually suit different types of films, based on the color levels, action etc... a cartoon can be improved by a filter that would make a dark action film look worse....
