I have a sendmail server that's acting as a mail relay. I want to re-configure it so that it relays mail to another server.
What do I need to do to achieve this?

So you've got a relay server that you want to make act like a relay server? Sounds like you're all set.....
However, check out the docs on sendmail, specifically how to set up a smarthost. Once you define that, and set up your domain(s) correctly (if your mail server further upstream is picky, that is), you should just have to bounce sendmail, and any emails received by this one box, will just get shoveled along to the 'smart' host, which will actually do the work.
Here's how I solved this: since I don't have a sendmail.mc file, I just edited the /etc/mail/sendmail.cf file and for DS I added the relay host's name and restart sendmail. So it looks like "DSrelayhost.domain.com"

VERY dangerous, and not recommended. Chances are you've got an mc file out there, but you may have to dig for it. Regardless, the DS option is the way to go, and I know I've done it for 'quick and dirty' things in the past, too.
That said, if your upstream server gets picky about who it accepts mail from, you'll have to look at the DH Dj and DM options, but those are all best modified via the MC file directives.
