Unhappy How to Change Fonts in Evolution message


I just downloaded and installed Fedora 3, dual-booting with WinXP on my Athlon 2600 home-built system. I love Fedora, and have always loved Evolution as a real Outlook and Groupwise alternative, but something seems to have changed with the later packages?
When I am writing a message in my Evolution 2.02, I have the option to change the font sizes, underline, Bold, etc, but nowhere can I find a way to change the actual font! I could have sworn that I used to be able to do it back when I was using Red Hat 9.1
What silly thing am I missing? I have tried changing the Character Set for Composer, which is currently set at Unicode UTF-8, but that hasn't helped a bit.
