Email in Linux Server

Which mail service is fast and secure with CenOS 5.5 or 6.0 ?

what kind of service are you talking about? "Email" can be handled in many many different ways. The most common thing to do would be to relay it using SMTP, and in that case, CentOS prefers Postfix, which is extremely competent, but also provides sendmail should you wish to use that instead.
