As far as hardware is concerned, you only need to compile code for the hardware that you have. You can use the command dmesg to get a fairly thorough enumeration of your hardware. Another utility that I use is the command lspci which comes in the pciutils package.
Don't get discouraged. Rolling your own kernel takes some time to learn. Keep working at it, and pop back on with more specific questions when you encounter stumbling blocks.
PS: I'm not so sure this thread belongs in the Linux - Security forum. Moderators may want to consider moving this.
A smaller kernel is less of a security risk - less services, less poetential holes. GNUbie is exactly right, just turn off the hardware that you don't need. I run Gentoo and it took me about 5 - 7 tries before I got it right. Now it is almost second nature and takes me 20 min to setup and compile my kernels. Hang in there, it's worth it.
