"CentOS is for servers" is an erroneous statement.

A better statement would be, it's more engineered with servers in mind rather than desktops, laptops, and workstations.

The best option is to find a distribution that offers stability, good support via it's own community or the community-at-large, has quality documentation, and has fairly decent reviews over both the long-term, and the short-term equally.

For that you need to read reviews, do research, and check sites like http://www.distrowatch.com often for user feedback.

Eh, it depends, really, Arch can either be an unstable hell or a reasonably stable system depending on whether or not you wanna run development versions of your software.

Stay away from the testing repos and your system would be reasonably stable. Will it be as stable as Slackware, CentOS/SL/Springdale, Debian Stable and LTS, or Ubuntu LTS? No, but it would be stable enough to be completely usable.

CentOS

I love fedora, but centos is more stable then fedora, so that is why I would choose centOS!
