MySQL default charset

I'm running FC5. I need to set the default server charset to latin1 it is currently (by default I guess) utf-8.

How do I proceed?

I've been reading : http://dev.mysql.com/doc/refman/5.0/...et-server.html but the command doesn't work. Neither mysqladmin --default-character-set=latin1 etc...

Thanks.

Well into httpd.conf I have commented:

#AddDefaultCharset UTF-8

And it solved my problem.
