MySQL default charset

I'm running FC5. I need to set the default server charset to latin1 it is currently (by default I guess) utf-8.

How do I proceed?

I've been reading : but the command doesn't work. Neither mysqladmin --default-character-set=latin1 etc...

Well into httpd.conf I have commented:

#AddDefaultCharset UTF-8

And it solved my problem.
