Well, seeing how ubuntu runs the linux kernel and apps. that run on that kernel, I don't know of any that are unique to ubuntu.

Is that a few tricks that run in linux, but not on windows, or cool tricks that work in windows and the users don't know about?

KWord is one. It's a word processor that can import, edit, then export PDFs. And, it's free. AmaroK is also cool. It can fetch lyrics off the web for the song you're listening to. It also has global keyboard shortcuts, so you can change songs, pause, adjust the volume--all while using another application. Edit: Sorry. I didn't read your question carefully. Those applications are Linux applications, but they are not unique to Ubuntu. No applications are unique to Ubuntu.

How about recovering files easily from a corrupt Windows installation? You just boot up Knoppix, click on the Windows partition, and email yourself the files, burn them to a CD, or transfer them to a USB drive.

How about changing the theme in Gnome by just dragging and dropping a .tar.gz from http://www.gnome-look.org to the System > Preferences > Themes folder instead of buying or dealing with the nagware on Windowblinds?

How about installing fifty different applications with a single command? That's right. You don't have to download fifty setup.exe installers, and click next>next>next>finish>reboot fifty times.

How about updating the OS to the newest version without having to buy an entirely new computer, paying over US$100 for a new CD, or pirating an illegal copy?

Need I go on?
