If you used Synaptic (or any other interface for apt), then use that to update your OpenOffice. If you installed it by compiling the source code, or by using some other installation method, it's probably best to remove the old package and then install the new one. But I guess you've either had it from the original installation cd or installed through apt (by using Synaptic, for example), which is basically the same procedure, so just use Synaptic.
