Odd X habit

Whenever I start up my computer with my moniter off (which is tend to do a lot), X resizes my resolution to 640x480. When I turn my moniter on after the boot-up and when Ubuntu is into GNOME, it looks like crap. I'm assuming this is because of an autodetection of the moniter. Is there a way to remove this "feature" or at least disable it, as it's quite annoying.

Do you have HorizSync and VertRefresh defined in xorg.conf? If not, run "sudo dpkg-reconfigure xserver-xorg" and choose the "advanced" option in the monitor configuration section. This should allow you to set the correct refresh rates (that you can find from your monitor's manual).
