Yes, that's one way to disable services (not applications which are launched by a user action).

You can have a look at these daemons manual pages to figure out if what they are used for and if it is safe to disable them.

I wouldn't call them unwanted:
Disabling nscd will slow down networking.
Disabling dtgreet will prevent you from being able to login outside in text only mode
Disabling svc.startd will make your system unusable.

Yes, have a look at the nscd manual page for the correct name to use.
Alternatively, if your Solaris release is recent enough, you can simply run the "netservices limited" command which will close all services but ssh (See: Secure by default
