For the 2.6 kernels I do the following:
edit the Makefile: there is the INSTALL_PATH variable that you should set. I always make a new directory for each kernel, e.g., /boot/2617, that way when I want to see my kernels I can clearly identify them. So, make that export INSTALL_PATH = /boot/<new dir>.
Then do your make menuconfig
Before exiting that, save your config to a file in your home directory. It's so much easier using a previous config file down the road of the 2.6 series.
Next, make modules_install and then make install.
That's it. You're done. You'll have to add a new entry in lilo or whatever you use to point to that directory with your new vmlinuz and the reboot!
