Xfig is really amazing. You can even include latex equation in your Xfig graphics.

In addition to xfig, Slackware has Karbon14 (Graphics/Scalable Graphics) and for UML diagrams there is Umbrello (Development/UML Modeller). Of course, if you prefer Dia, there is a SlackBuild available for it:

Not to mention (OK, I am mentioning it) the big one: Openoffice.org. It's "Draw" application is quite good, and unless you really don't need a whole office suite, I recommend it.

Rather "different", but very fast, efficient and simple, and it supports important output formats: Tgif.

I've used it to plan where my furniture should be positioned when I had to move, and I prepared schematics for various professional and personal purposes with it.

BTW, I know all other programs recommended by the other posters so far, too, and they are good. Especially OpenOffice.org Draw is really powerful. But Tgif is still my personal favourite all-purpose drawing program.
