How to open and edit file in hex mode in linux terminal?

This appears to do the job: http://sourceforge.net/projects/shed/

And, of course there is hexdump to view the files.

What about hexedit.

It might not be installed in your distro, but your package manager should be able to do that for you. (too bad you didn't specify your distro)
